  2. In a large bowl, mash the bananas with a fork until mostly smooth — a few small lumps are fine and add texture.
  3. Stir the melted butter, brown sugar, egg, and vanilla into the bananas until well combined.
  4. Add the flour, baking soda, salt, and cinnamon, and fold with a spatula just until no dry streaks remain. Overmixing makes banana bread dense and rubbery.
  5. Fold in the walnuts or chocolate chips if using, then scrape the batter into the prepared pan and smooth the top.
  6. Bake for 50–60 minutes, until a toothpick in the center comes out with a few moist crumbs but no wet batter. If the top browns too quickly, tent it with foil for the last 15 minutes.
  7. Cool in the pan for 10 minutes, then lift out onto a rack. Slice when fully cool — or warm, with butter, if patience is not your thing.

  • For the deepest flavor, use half brown sugar and half granulated — the molasses in brown sugar complements the banana beautifully.
  • The loaf slices cleanest the next day. Wrap it tightly in foil once cool and it will stay moist for 3–4 days on the counter.
