No-Bake Cheesecake
There is a time and place for water baths and springform gymnastics, and then there is July. This no-bake cheesecake is the one I make all summer: the filling is stabilized with whipped cream instead of eggs, so it sets into something lighter than baked cheesecake but every bit as rich and tangy. The graham crust comes together in one bowl and pressed-in-the-pan effort. The only real requirement is patience — four hours in the fridge turns the filling from soup to silk — and then it is yours, crowned with whatever berries look best this week.
