Ingredients
- 1 cup old-fashioned rolled oats (not instant)
- 1 tablespoon chia seeds
- 1 cup milk (any kind, dairy or plant-based)
- 1/2 cup plain or vanilla Greek yogurt
- 1 1/2 tablespoons maple syrup (or honey)
- 1/2 teaspoon vanilla extract
- 1 pinch salt
- 1 cup mixed berries or sliced banana, for topping
- 2 tablespoons toasted almonds or walnuts, for topping
Instructions
- In a bowl or large measuring cup, stir together the milk, Greek yogurt, maple syrup, vanilla, and salt until smooth.
- Add the oats and chia seeds and stir thoroughly — you want every oat coated so it softens evenly. Scrape down the corners of the bowl.
- Divide the mixture between two jars or containers with lids. The mixture will be loose and soupy; that is correct — the chia and oats thicken it overnight.
- Seal the jars and refrigerate for at least 6 hours, ideally 8 or overnight, until thick and creamy.
- In the morning, give each jar a good stir. If the oats are thicker than you like, loosen with a splash of milk.
- Top with berries or banana and toasted nuts just before eating, and enjoy cold straight from the jar.
Tips for Success
- Use old-fashioned rolled oats only. Steel-cut oats stay hard, and instant oats turn to mush overnight.
- A pinch of salt is the upgrade nobody talks about — it rounds out the dairy and makes the maple syrup taste more maple-y.
- Batch four jars at once on Sunday; the base keeps well for 3 days. Add crunchy toppings only when serving so nothing goes soggy.
Frequently Asked Questions
Can I use water or juice instead of milk?
Milk gives the creaminess that makes overnight oats good, but almond, oat, or soy milk all work beautifully. Water alone makes a bland, watery base.
How long do overnight oats last?
The plain base keeps 3–4 days refrigerated in airtight jars. Stir well before eating; a little liquid separation on top is normal.
Can I warm overnight oats up?
They are designed to be eaten cold, but you can microwave a jar (top removed) for 60–90 seconds. It becomes more like traditional oatmeal — still delicious.
Do I have to use chia seeds?
No, but they thicken the mixture and add fiber. Without them, use a bit less milk — about 3/4 cup — or the oats will be looser.
