I'm Zainab, and I cover the Pakistani and Desi kitchen for Cuisinety. I grew up between Lahore and Karachi, learning from a mother whose nihari pot never emptied during wedding season and an aunt who could fold a samosa blindfolded. I spent more than 20 years running Sunday dastarkhwans and full Eid tables before I ever wrote a recipe down — so when I finally did, I wrote the way I cook: quantities included, no guessing. My section covers the whole canon — layered chicken biryani, wok-hot karahi, overnight nihari and haleem, seekh and chapli kebabs, stuffed parathas, and the crispest samosas and pakora. When I review a recipe, I check the method against the way these dishes are actually cooked at home: are the whole spices bloomed, is the simmer given its time, and is the fresh ginger and green chili added at the end, where it belongs. What can you expect from me? Recipes that respect the tradition and your evening — slow-cooked depth without mystery, every step written the way I'd explain it across the counter.
