Wei brings the Asian section to life: quick wok dinners, noodle bowls, and sauces that taste like they took an hour (they took ten minutes). He grew up in Shanghai watching his mother work a wok over a screaming flame, and spent 10 years cooking for friends, family dinners, and late-night kitchen experiments before putting any of it on paper. He believes the wok is the original one-pan dinner — and that the secret to weeknight Asian cooking is prep order, not exotic ingredients.
