Karim grew up in Fez around the family grill and the neighborhood bakery, learning the trade from his father and uncles — 15 years of Friday-night grills and slow-simmered pots before he ever wrote a recipe down. He covers Middle Eastern cooking — from chicken wings with sticky honey-garlic glaze to slow-cooked tagines — and believes proper spice handling beats fancy equipment any day. When he is not testing recipes, he is arguing about the correct way to make hummus.
